Hearty Vegetarian Chili

Chili is an easy meal that tastes great any time of year. Plus, this vegetarian chili recipe is packed with protein-rich beans and tons of veggies.

Ingredients

The Perfect Vegetarian Chili

  • 1 onion
  • 1 red pepper
  • 1 yellow pepper
  • a bunch of fresh coriander
  • 1 red chili
  • 1 green chili
  • 2 cloves of garlic
  • 2 cans of kidney beans
  • 2 cans of chopped tomatoes
  • 1 tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 2 bags Chili Simply Protein Chips
Directions
  1. Chop onion, peppers and garlic. Finely chop coriander and chilis.
  2. In a large pot, heat oil on medium. Add onion, peppers and garlic. Cook for five minutes while stirring occasionally.
  3. Add in coriander, chili, cayenne pepper, cumin, cinnamon, salt and pepper. Cook for another 10 minutes.
  4. Drain the kidney beans and add to the pot with the tomatoes. Bring to a boil and then cook on medium-low heat for 25 minutes.
  5. Serve chili in individual bowls and top with Chili Simply Protein Chips before eating.
